The only restaurants who know me, know my wife and I as good customers.

I'm a long time away from my kitchen days. José at Fleurie was my last connection, for the most part...and he's now gone.

Regarding being viewed as a "good customer".... we eat well, tip really well, have no demands, are complimentary, show up on time for reservations, and share the wine we bring. We ask for their recommendations and typically take their advice. We try to get the know the owners/managere as much as possible. My wife is a restaurant person as well, so we appreciate the staff and they return the favor. Last time we ate at Fleurie, I brought a bottle for the staff (a more aged version of the same wine they have on their list). It's much more fun for restaurant staff when you are excited to be there. It's a win-win.

To answer your question more directly, we would not have experienced that kind of service at places that we frequent. But we also frequent places that never have service issues like we experienced last night. (I do recall Wahoos1 saying he had a crappy experience at Fleurie, which is shocking to me, but I know he speaks the truth).
