I threw what was captured into the dutch oven for the ribs

but an hour of smoke on 8 small/medium ribs didn't give much juice. It was enough to dump a tiny bit into the dutch oven, but not nearly enough to impact the risotto (when you're talking like multiple quarts of stock vs. a spoonful of meat juice, you just don't get a ton out of it).
