Visited Zion briefly in Oct 2017 -- Zion Guru outfitters served us well.

Hiking the Narrows should be your #1 priority as long as flash flooding isn't a risk. Not to oversell it, but only St. Peter's in Rome has been as awe-inspiring an experience for me. We had a great experience with Zion Guru. We rented wading pants, canyoneering boots, and walking sticks there the night before. They gave us good advice about how to get in ahead of the crowds. They were also a good source of advice about other hikes. We carried lunch, snacks, and lots of water.

They also recommended the Northgate Peak Trail to us. You have to drive out of the park to get around to the trailhead, which may not be appealing in an RV, but both the drive there and the vista at the hike's end were stunning.

We ate at Oscar's (breakfast and dinner) and at the Bit and Spur (dinner). Both were fine. Sol Foods Supermarket was a good place to stock up.

We didn't have time to visit Bryce or the Grand Canyon.

You'll pass St. George on the way to Springdale. It was a beautiful marathon course, but there's not a lot to do in town unless you're LDS and can go inside the temple. Or want to see Brigham Young's summer house. The only thing I'd recommend is driving up Rt 18 north of the city to see the Petrified Dunes or Whiterocks Amphitheater.
