I pseudo-cheat b/c I don't have the time either. I smoke stuff for 6 hrs

on my Weber Smokey Mountain amd then finish them in the oven. In my case, the oven is an electric smoker because finishing Q in the oven means your house smells like Q for a week. Not a problem for me, but Ms. Chef said no way.

6 hours is about all the time meat can absorb smoke anyway. No chance I have a spare 15-18 hours.

Edited to add... I like the flavor of charcoal too so I don't go the pellet route.
