Disagree on engineering.
Many topics require labs that frankly are more informative than any lecture.
However, all of these labs are administered by grad students, the profs never take part.
This problem is easily solved with small satellite offices that offer the labs. You could even contract out third parties for them as is done with most technology training and certification.
I suspect just about every undergraduate curriculum is analogous. I mean let's face it... bio, chem and physics labs aren't being run by professors at the undergraduate level.
Graduate programs I could see remaining as an on-site necessity for science focused domains.
