We did the annual beach trip to the Outer Banks until ours were about 11 and 9, and then started more adventurous trips like what you're describing. We did the "dude ranch" trip twice, once outside of Denver and once in Idaho. While horses were obviously involved, there were tons of other activities (first fly fishing trout). Anyway, no real help to your question, other than ski towns in the summer should provide you with tons of options. Jealous!!

Actually, one suggestion. Look up apps for driving tours. Last summer we used one from GyPSy, and it was the best $20 I ever spent. We were in Canada and despite a fair amount of driving, we never turned off the app. Tons of information on the parks, history, geology, and animals. If they have one for any parks you might visit, I would definitely purchase.
