When the defensive team gains possession, they are trying

to get it into the offensive half of the field, or to "clear" the ball. they are doing it generally with a number of people that have long sticks, a goalie stick etc. and are generally not the best ball handlers on the team because their sticks are easier to check and they are defensive personnel, after all.

the former offensive team trying to stop them from "clearing" it is "riding" them. some teams try hard at it to get the ball back (like pressing in basketball), some don't and are more interested in changing out personnel in the midfield (changing offensive guys for defensive guys) and not giving up fast breaks.

once the ball is cleared into the offensive zone with attackmen holding it, the ball is largely cleared and the ride is over. team B has now fully converted from settled offense to settled defense. of course, if we got the ball back in between on "the ride", the ride was successful and we are back on offense.
