Chuck roast is my go to for bbq beef sandwiches. Mesquite or Hickory smoke.

Salt, Pepper, &Garlic Powder. 185-195 degrees and then wrap in red paper with a splash of bourbon. Take off at 205. Tear it apart and use whatever sauce you like. Or none.
Cheaper cut but make the best bbq and you're not paying for an inch or two of fat cap.
