A steak should not raise THAT much in IT in 10 minutes...


You're right, you certainly account for some rise in IT from resting, but it depends on the thickness of the steak. A thick 1.25" ribeye isn't going to rise a whole lot. A few degrees... I will typically pull a fat ribeye like that at 131 or 132 or so, and it hits 135 after a nice rest.
